Taters

The caption under this photo reminds me of what my granddad used to say in connection with his extremely scanty education: "I went to school until they tried to tell me that 'taters' starts with a P."

The Work is Hard and the Crop Unpredictable

Potatoes are subject to a variety of problems. I'm amazed they are as plentiful and inexpensive as they are. If you're considering dropping carbs from your diet anyway, Google "potato disease defects". Look at the images and read the accompanying descriptions. I learned this many years ago while touring a potato farm just south of Caribou. Obviously, I have not forgotten.
