smoked meat?

Interesting that one of the men in the picture is smoking a cigar and another a cigarette. Not allowed with food handlers today!

What kind of animal do they have hanging up there? That side is bigger than the man.

Note the USDA stamp on the fat. This would have the EST number on it that would tell you what plant it came from.
